See the light at restaurant VYN

When Daniel Berlin's wife Anna became ill with cancer, he closed his two-star Michelin restaurant in Tranås, Skåne. Three years later, in the autumn of 2023, he was back with the new restaurant VYN (THE VIEW) in Österlen, Skåne.

In this newsletter, we'll tour the restaurant from the perspective of lighting.

Enjoy!

A treat for all senses

Daniel has a very high level of ambition. A visit to VYN should, in addition to a unique dining experience, delight all the senses. The interior comprises beautiful, robust natural materials such as oak, limestone, linen, and wool. Everything is selected to match the location and the character of the building. The light should highlight the materials and lead you without being seen.

When the golden twilight light falls, it is captured in the outdoor lighting around the buildings and rooms. The light has the same color temperature both outside and inside, so the boundaries are blurred.

Light play from the forest

At the entrance, you are greeted by a couple of marked light beams on the door. They have been inspired by how the light falls through the crowns of the trees in the surrounding forests. Here, the theme of light beams follows you to the reception and further down the corridor to the restaurant.

Not only the food is locally grown

The fantastic door handle for the restaurant door has been carved by wood sculptor Carsten Nilsson from Borrby, seven minutes from VYN. He, like many other of the restaurant's consultants, contractors, and suppliers, is from the local area.

The culinary journey begins in the hearth

The culinary journey at VYN begins in the foyer, where guests enjoy several smaller dishes. Throughout the experience, the food is the hero and brightly sparkles. Therefore, the light is dimmed everywhere except on tables and serving surfaces.

The foyer was once a stable with a smithy, which is reflected in the fireplace. Around the walls is a discreet, warm grazing light that allows the fire to envelop you, giving the feeling that you are sitting in the middle of the hearth in the forge.

Closer seating in the restaurant

After seating in the foyer, guests are moved into the restaurant, which seats 30 people. Here, guests and serving staff are closer together. The slightly larger dishes are served while you enjoy the view over Hanö Bay and the Danish island of Bornholm.

Chambre séparée

One floor up, another level of view is provided with a Chambre séparée that can be booked by 7-24 people. Here, the staff adjusts the light depending on the table setting. The room has its own kitchen and wines.

Reflected light illuminates

In the room's kitchen area, the lighting is directed downwards towards the work surfaces. A stylish effect is created when the light hits the stainless-steel benches and reflects a soft indirect light that illuminates the vaulted ceiling.

The chefs are actors

At VY, the food is the protagonist, with the chefs as actors. The kitchen's strong downlight of up to 1500 lux is directed straight at the work surfaces. It lifts the dishes' colours and focuses on the chefs' work. In contrast, the aisles between the desks are minimal. As the ceiling and walls are black, the light is only reflected once. Then it lights up the chefs and their work, like actors on a dark stage.

Play of light in the wine room

In the wine room, two hand-blown globes provide a changing play of light reflected in the bottles. As an effect and an enhanced reading light, there are four thin arches with a direct light toward the tabletop.

Accommodation at VYN

The restaurant building includes fifteen hotel rooms, two of which are suites. The corridors to the rooms have a floor lit in the middle. At each room, the number plate is illuminated so that the light spills onto the floor and shows you where your room is.

Follow the rays all the way in

The light in the hotel rooms is maximally shielded and only exists where needed. The focus is on the curtains and corners to make the room feel bigger and airier than it really is. This ambient lighting is complemented by a few directional luminaires.

The soft grazing light on the curtains is recognizable from the other parts of the room but with variation. The gallery after the entrance is slightly more distinct in strength and direction, and it is strongly marked on the front door, like sunbeams.

If VYN is fully booked, you are welcome to the Vinbaren

In a separate building next to the restaurant is Vinbaren, a wine bar that is VYN's village restaurant. A more uncomplicated menu is served here. As the name suggests, you can just sit in the garden with a glass of wine and enjoy the view. Some tables can be booked, but most are reserved for drop-in.
VYN is nominated for the Swedish Lighting Award 2024

The Swedish Lighting Society, Väst and Sydljus, organizes the competition in collaboration with the magazine Ljuskultur. The award aims to show the high level of lighting design in Sweden and highlight the importance of good lighting. The jury assesses visual, aesthetic, functional, technical, and operational aspects. The decision on the winner will be announced in September.
Project group VYN

The project has been designed by Peter Rosenqvist Design, and the design concept is by Fojab Arkitekter, with Lisa Mannheimer as responsible. All this was done in close collaboration with Daniel Berlin.
